Sliding Mode Control Applied to a Pasteurization Plant: A Performance Evaluation

Abstract

This work presents a Sliding Mode Control approach to provide appropriate control signals for maintaining the pasteurization process working within a specified temperature range. The idea behind our approach is to get a faster response, reducing the settling time without overshoot, keeping the nutritional content of the food ingredients regulating their temperature at a specific range, and maintaining the quality of the food during storage. Thus, the resulting controller permits energy savings and abstain from overheating the milk, avoiding a roasted taste and destroying its nutritional value.
