The objective of this study is to analyze the behavior of a bioreactor, simulate it for different cases and optimize the initial conditions to increase the amount of lactic acid product. Different mathematical models were used in order to explain the process of lactic fermentation considering as parameters the activity inhibition factor, the rate of bacterial growth and the biomass concentrations (Lactobacillus helveticus), whey isolate substrate and lactic acid. The simulation was carried out in MATLAB, the systems of Nonlinear Differential Equations were solved using a 4th Order Runge-Kutta algorithm. The change sensibility was observed by altering the concentrations of the reagents besides to analyzing the amount of product obtained in less time, thus achieving a higher yield in the process of producing lactic acid.
